  • 3.5 oz feta
  • 2 slices white sandwich bread
  • 2 eggs (medium)
  • breadcrumbs
  • 1 clove garlic (to taste)
  • extra virgin olive oil
  • salt

Preparation

  • After cleaning and washing, cook the spinach in a pan with a drizzle of oil, a pinch of salt, and a garlic clove, if desired.

    A few minutes will be enough, when tender, transfer them to a cutting board (squeezing out excess liquid if necessary) and chop them finely with a knife.

  • Place the spinach in a bowl, add the crumbled feta, eggs, and chopped sandwich bread (preferably using a food processor) (1).

    Season with salt and pepper, mix well, and add a tablespoon of breadcrumbs if the mixture seems too moist (2).

  • With your hands, form round or slightly flattened meatballs. Roll them in breadcrumbs and place them on a baking tray lined with parchment paper (3). I made 15, but you can make them smaller or larger as you prefer.

  • Brush the surface with a little extra virgin oil and place the meatballs in a fan oven at 375°F.

    Bake for 20-25 minutes, turning them halfway through. When a light crust forms on the surface, remove them from the oven.

  • The spinach and feta meatballs are ready, serve them hot with a sauce of your choice or a simple side of potatoes or vegetables.

Tips and Notes

You can substitute spinach with Swiss chard or mixed greens. I recommend using fresh ingredients, but frozen ones are also fine if needed.

If you prefer, you can blend all the ingredients in the food processor for a more homogeneous and less rustic mixture.

You can use either white or whole wheat sandwich bread, rustic bread crumb, or sliced bread.

You can add a tablespoon of grated Parmesan cheese if desired.

You can cook the meatballs in a pan instead of the oven, using either extra virgin or seed oil.
