You can replace the squid with fresh cuttlefish. I recommend choosing medium-sized squid (or cuttlefish), not too small because you’d struggle to fill them, and not too large as they are not suitable for pan cooking.
You can use fresh peas if in season, or frozen ones during the rest of the year.
You can chop the tentacles and add them to the stuffing, instead of cooking them whole.
