- 12.3 oz swordfish
- 2 slices white sandwich bread
- 1 egg (large)
- 1 clove garlic
- parsley
- lemon zest
- as needed breadcrumbs
- extra virgin olive oil (or seed oil)

Preparation
Clean the swordfish by removing the skin and dark parts. Cut it into very small and regular pieces, using a knife (as I did) or a mixer if you want to speed up.
Break up the bread and put it in a food processor along with the peeled garlic and a sprig of parsley. Blend for a few seconds until you have a homogeneous mixture.
Combine the swordfish and the freshly chopped bread in a bowl, add the egg, the grated zest of about half a lemon, salt, and pepper (1).
Mix well and combine with your hands; if the mixture seems too soft, add a tablespoon of breadcrumbs.
Form round meatballs slightly larger than a walnut and roll them in breadcrumbs (2). I made 15, but you can make them larger or smaller.
Place them in the basket of the air fryer, on the special paper (or even without paper). Spray them with a little seed oil or extra virgin olive oil.
Set the temperature to 375°F and cook the meatballs for 15 minutes, turning them halfway through and spraying them again with a little oil. Adjust the times according to your air fryer model and the size of the meatballs.
The swordfish meatballs are ready; you can serve them hot or warm, accompanied by mayonnaise or yogurt sauce.
Tips and Notes
You can use both fresh and defrosted fish, as long as it is of good quality. If you chop it in a mixer, blend for a few seconds only, otherwise it will become a puree.
I used very soft bread; if yours is a bit dry, I recommend soaking it in milk first.
Besides parsley, you can use other aromatic herbs, such as mint or oregano.
Always use an organic lemon, or at least one with an edible peel.

Can I bake the meatballs in the oven?
Of course, in this case, place them on a baking sheet lined with parchment paper, lightly brush with oil and bake at 375°F for about 20 minutes.
Alternatively, you can fry them in a pan until golden.
