Tips and Variations
Instead of slices, you can use a turkey breast fillet and have it opened by your butcher.
I used smoked cooked ham, but normal ham or speck is also fine.
You can replace the spinach with chard or chicory, just make sure to dry them well in the pan.
You can add a sprig of rosemary, some sage leaves, or bay leaves to the pan.
