You only need a few ingredients to make it: yogurt, grated cucumbers, garlic, mint, and good extra virgin olive oil… in just a few minutes, you can serve your tzatziki sauce; it will be perfect for an aperitif with friends or a nice summer dinner!

Ingredients
- 1 cucumber (about 3.5 oz)
- 10.5 oz Greek yogurt (5% or 2% fat)
- 1 clove garlic
- mint (or parsley)
- lemon juice
- extra virgin olive oil
- salt
- pepper

Preparation
Wash the cucumber and grate it without peeling. Place it in a strainer and let it drain for 30-40 minutes.
Afterwards, squeeze it well and dry it with a kitchen paper towel.
Peel the garlic and press it, or chop it very finely with a knife.
Pour the Greek yogurt into a bowl, add the garlic, 2-3 chopped mint leaves (or parsley), a splash of lemon juice, salt, and pepper.
Finally, add the grated cucumbers and a drizzle of olive oil. Mix everything, taste, and adjust the salt if necessary.
Your tzatziki sauce is ready. I recommend placing it in the refrigerator (covered with plastic wrap) and let it marinate for 1-2 hours before serving.
It keeps for up to 2-3 days in the refrigerator in a closed container.
Tips and Notes
Before grating, taste the cucumber to ensure it is not bitter.
You can increase or decrease the amount of garlic to your liking.
You can substitute lemon juice with white wine vinegar (about half a tablespoon).
If you don’t like mint, you can replace it with parsley or dill.
