Tasty vegetable fritters, crispy and flavorful, with grated potatoes, carrots, and zucchini… quick to prepare, they cook in a pan in a few minutes. The procedure is very simple, just grate the vegetables, add flour, a pinch of baking soda and herbs to taste, and finally form the fritters with your hands. The vegetable fritters are great to accompany the appetizer or as a vegetarian main course, try them too, they are delicious!

Ingredients
- 8 oz oz potatoes
- 7 oz oz zucchini
- 7 oz oz carrots
- 3/4 cup cup all-purpose flour
- 1/4 tsp tsp baking soda
- Half tsp sweet paprika (to taste)
- herbs (dried, to taste)
- peanut oil (or extra virgin olive oil)
- salt

Preparation
Wash the zucchini and remove the ends. Wash and peel the carrots and potatoes.
Grate all the vegetables with a wide-hole grater, or with a food processor if you want to speed up.
Put everything in a bowl (1), add the baking soda, paprika, herbs, and flour.
Also add a pinch of salt and mix “kneading” with your hands (2).
Still using your hands, form fritters by pressing the mixture between your palms. You should get about 20 fritters, depending on size.
Heat a large pan with 3-4 tablespoons of oil (you can use either peanut oil or extra virgin olive oil, to your taste).
When the oil is hot, place the fritters in the pan and let them brown for about 5 minutes, turning them once or twice (3).
As they are cooked, transfer the fritters to a sheet of paper towel, to dry them from excess oil.
Your vegetable fritters are ready, crispy and delicious, serve them hot or warm.
Tips and Notes
The fritters are excellent freshly made, but if you have leftovers, you can reheat them in the oven for a few minutes.
You can flavor them with oregano, thyme, parsley, or other herbs. If you like, you can add a pinch of garlic powder or some slices of green onion.
