Vegetable Skewers

Colorful and tasty vegetable skewers, perfect as a side or vegetarian appetizer… They are quick to prepare and can be cooked in an air fryer (using the skewer rack) or in the oven. In this case, I used potatoes, champignon mushrooms, and zucchini, but you can use any vegetables you prefer, just make sure they are cut to the same thickness. You can season the vegetables with mixed herbs and spices to your liking, and you’ll see that the skewers will be delicious and flavorful!

Ingredients

  • 3 potatoes
  • 2 zucchini
  • 4.2 oz champignon mushrooms
  • herbs (to taste)
  • garlic powder (to taste)
  • extra virgin olive oil
  • salt
  • pepper

Preparation

  • Wash the potatoes, zucchini, and mushrooms thoroughly, removing any dirt.

    If using new potatoes, you can leave the skin on, otherwise, peel them.

  • Cut the vegetables into regular slices, about a quarter-inch thick (1).

    Place them in a bowl, season with salt, pepper, olive oil, a pinch of garlic powder, and a handful of dried herbs to taste (oregano, thyme, parsley, marjoram, etc.).

  • Now assemble the skewers by alternating slices of potatoes, zucchini, and mushrooms (2).

    If you intend to cook them in an air fryer, use the rack with metal skewers, otherwise, you can use bamboo sticks.

  • Place the vegetable skewers in the air fryer basket, arranging them on their rack. Cook at 392°F for 7-8 minutes, then lower the temperature to 374°F and continue for another 7-8 minutes.

    Check that the potatoes are cooked, if not, extend the cooking time.

  • If you prefer to use the oven, place the skewers on a large tray and bake at 356-374°F for 25-30 minutes. Always check that the potatoes are cooked before removing them from the oven.

  • Your vegetable skewers are ready, serve them hot as a side dish or as a tasty appetizer.

Tips and Notes

You can vary the vegetables according to the season and your taste, adding, for example, bell peppers or onions.

Adjust the cooking times based on your model of fryer / oven, and according to the thickness of the vegetables.
