An incredibly simple and quick idea for a fresh, light, and colorful summer dessert… the “watermelon” pizza is not (obviously) a real pizza, but is based on a slice of watermelon, which is topped with other seasonal fruits. In my case, I chose kiwis to give a color contrast, peaches, and berries, but you can add the fruits you prefer or have at home. The watermelon pizza is ready in just a few minutes and is perfect for the hottest days, instead of the classic fruit salad, or if you want to serve watermelon in a more original and scenic way. Try it, and you will see that it will be a success!

Ingredients
- 1 slice watermelon
- 1 kiwi
- 1 nectarine
- 1/2 cup berries
- shredded coconut (to taste)
- mint (to taste)

Preparation
Wash and dry the watermelon, cut a slice about 1 inch thick from the center.
Cut the slice into 6 or 8 wedges. To avoid the hassle of seeds, I chose a Seedless Watermelon… if you have a regular watermelon, I recommend removing the seeds where possible.
Peel the kiwi and cut it into thin slices.
Wash and dry the nectarine, remove the stone and also cut it into slices. If you prefer, you can peel it.
Gently wash the berries and let them dry.
Wash and dry some mint leaves, if you like.
Place the watermelon on a serving plate and distribute a few slices of kiwi and nectarine on each wedge, then add the berries.
Finally, garnish with mint and sprinkle with shredded coconut to taste.
The watermelon pizza is ready to be served, perfect for the end of a meal or an afternoon treat!
Tips and Notes
You can vary the fruit according to your tastes, for example, you can add bananas, apricots, melon, mango, plums, etc.
I recommend assembling the pizza at the last minute, so the fruit stays fresh. However, if you need to prepare it 30-40 minutes in advance, sprinkle it with a few drops of lemon juice.
