A delicious and simple dessert to make, with whole wheat flour, raisins, and chocolate chips… perfect for breakfast, but great at any time of the day. I got the recipe from Claudia Fornaciari’s blog (which I recommend you visit), adjusting just a few measurements to fit my mold. The whole wheat plumcake is easy and quick to prepare; you won’t even need a mixer because you can mix it with a spoon… just combine the dry ingredients with the liquids. Try this recipe, it’s really delicious!

Ingredients
- 1 3/4 cups whole wheat flour
- 2 eggs (medium)
- 1/2 cup sugar
- 7 tbsp vegetable oil
- 1/2 cup milk (or plant-based beverage)
- 1 tsp baking powder
- 1/3 cup chocolate chips
- 1/2 cup raisins
- 1 tbsp poppy seeds (optional)
- 4 walnuts (for topping)
- 1 tsp vanilla essence (optional)
Tools
- Loaf pan 8.5×4 inches
- 2 Bowls
- Hand whisk
- Sieve
- Parchment paper
Preparation
Soak the raisins in a bowl with warm water.
In a bowl, crack the eggs, pour in the milk, oil, and vanilla. Mix well with a whisk (1).
In another bowl, sift the flour with the baking powder, add the sugar, poppy seeds, and chocolate chips, saving a handful for later. Mix with a spoon (1).
Gradually combine the dry ingredients with the wet ones, mixing with the whisk or a spoon, without kneading too long.
Squeeze the raisins and dry them with kitchen paper. Add them to the batter and distribute them, saving a handful for later (2).
Line the pan with parchment paper. Pour the mixture and level it, then add the reserved raisins and chocolate on top, along with the broken walnuts (3).
Put the plumcake in a static oven at 356°F and bake it for about 50 minutes. The times vary depending on the oven and the mold used, always check with a toothpick that the cake is dry in the center.
Afterward, take it out and let it cool well on a rack.
The whole wheat plumcake with chocolate and raisins is ready, perfect at any moment of the day!
Tips and notes
You can slightly increase or decrease the amount of chocolate, raisins, and walnuts.
You can use a plant-based beverage instead of cow’s milk.
If you prefer, you can make the dessert in a round cake pan with a diameter of 8-9 inches. In this case, the baking times might be shorter. With the same batter, you can also make muffins.
