Herb and Mixed Seeds Buns

Today we’re making some delicious herb and mixed seeds buns, perfect to stuff for an appetizer or a quick dinner, but also with a spread of jam (I tried them with blueberry jam) for a snack!
So tasty and easy!

Ingredients

  • 3 1/4 cups flour (Petra3)
  • 1/3 cup rice flour
  • 1/3 cup re-milled durum wheat semolina
  • 1 tsp dry yeast
  • 1 1/4 cups water
  • 1 tsp fine herb salt (rosemary, thyme, marjoram)
  • 2 tbsps extra virgin olive oil
  • 3 tbsps mixed seeds for baking
  • Milk

Preparation of Herb Buns

  • Let’s start preparing the dough for these delicious herb and mixed seeds buns. In the mixer bowl, pour the previously sifted flours with the yeast and mix with the K-beater. Gradually pour in the water and start kneading on low speed, ensuring all water is absorbed. Once all the liquid is incorporated, insert the spiral hook and knead until it detaches from the bowl walls. (If you notice the dough is overheating, stop the mixer, wait a few minutes, and continue. When it starts to come off, add the herb salt while continuing to knead and finally the oil, slowly, until smooth and elastic. Once you have a nice smooth and homogeneous dough, let it rest covered with a cloth for about 10 minutes, then proceed by doing three rounds of folds 10 minutes apart. After completing the folds, let it rest for another 10 minutes, shape well, return the dough to the bowl, seal with plastic wrap, and let rise until doubled in the oven with the light on and a bowl of hot water. It will take about 2.5 hours, but it depends a lot on the temperature. (In summer it takes less time!) At this point, turn your dough onto a semolina-dusted work surface, cut the dough into pieces of about 80 g (2.8 oz) and form balls. Let rise on a baking tray lined with parchment paper, spaced well apart until doubled, just like in the previous step. Gently brush the surface with a bit of milk. Now your buns are ready to be baked. Bake in a preheated static oven at 200°F for about 10 minutes. You can eat them immediately or let them cool and freeze them to have them ready when needed!
