Don’t get me wrong, I am definitely an omnivore, and so is my husband, but we really love vegetables, so from time to time we cook, sometimes without even noticing, with completely natural ingredients.
This pasta is an example of a vegetarian and definitely delicious first course….lots of vegetables, color, and flavor!

Ingredients
- 6 oz fusilli
- 3/4 cup frozen peas
- 5.3 oz artichoke hearts (frozen)
- 1 fresh green onion
- 2 tbsps extra virgin olive oil
- 5 oil-packed sun-dried tomatoes
- to taste salt
- to taste pepper
- 3.5 oz stracchino cheese (yogurt-based)

Procedure
You will need very few minutes to cook this delicious pasta with a spring flavor. Put a pot on the stove with plenty of salted water and bring it to a boil, in the meantime prepare the sauce.
In a sauté pan, put the extra virgin olive oil and the green onion cut into rounds (avoid the green part) and let it wilt slightly. Then add the frozen artichokes cut into quarters and the peas.
Cook on medium heat for a few minutes, then add a splash of water and cover, continuing to cook on low heat. Meanwhile, cook the pasta and drain it al dente.
Chop the sun-dried tomatoes and add them to the sauce. Adjust with salt and pepper and turn off the heat.
Pour the al dente pasta into the pan and mix well so that it gets flavored. If needed, add a bit of cooking water.
Serve on a nice serving dish adding a few spoonfuls of stracchino here and there so that it melts slightly with the heat of the pasta.
