I finally managed to try a dish that I had in mind for a while: pulled chicken.
White meat, economical, super flavorful, and perfect for stuffing a sandwich and a king’s salad!
If you are a fan of BBQ and spices, this is definitely a recipe to replicate!
I’ve also left some tips on the tools I have at home and routinely use for cooking like this!

Ingredients
- 1.76 lbs chicken breast
- 2 tablespoons bbq rub
- 1 red onion
- 1 clove garlic
- 2 red peppers
- 10 cherry tomatoes
- 1 tablespoon extra virgin olive oil
- Half lemon (juice)
- Half lime (juice)

- 1 Cast Iron Pan
How to Prepare a Delicious Pulled Chicken
First, prepare the barbecue for direct cooking over medium heat (about 320°F) and heat the cast iron plate inside. I use the one I recommended above; I find it excellent and practical thanks to the detachable handle and the convenient wooden trivet to place it on. I’ve cooked everything on it and it’s perfect.
Meanwhile, cut the chicken breast into pieces (cubes about 3 inches per side) and rub it with the BBQ rub (if you wish, you can also add a little barbecue sauce). Let rest and prepare the peppers: remove the white internal filaments and seeds and cut them into strips. Then peel the onion and cut it into wedges (not too small, otherwise it will burn quickly).
Place the vegetables in a bowl and season with oil and salt. Mix well and, once the plate is hot, pour them inside.
Cook for about 15 minutes, checking from time to time.
Remove the vegetables and set them aside.
Now brown the chicken on the plate for a few minutes, then re-add the vegetables and lemon juice.
Cook for about ten minutes.
Meanwhile, cut the cherry tomatoes into 4 wedges each, lightly salt them, and add them to the chicken and other vegetables.
They just need to get a bit warm, a few minutes will be enough.
Now your pulled chicken is ready. Drizzle with a little lime juice, taste, and if necessary, lightly salt.
Shred it with your hands or with the help of two forks and… enjoy your meal!
Storage
You can store it in the fridge for a few days and reheat it with steam to keep it juicy.
