Ingredients for Udon with Zucchini and Peas
- 14 oz udon (pre-cooked)
- 1 zucchini (medium)
- 3 tbsps peas
- 2 fresh scallions
- 1 cube fresh ginger
- 1 dried red chili pepper
- 1 tbsp vegetable oil
- 4 tbsps soy sauce

How to Cook Delicious Udon Quickly
First, get a wok. If you don’t have one, you can use a pan or purchase it directly from the link above. It’s not the original Asian one, but it’s a good compromise for cooking Asian at home.
Take care of the vegetables: wash the zucchini and julienne it, take the scallions, remove the green part of the stem, and cut the bulb into 4 wedges then into slices.
Put the vegetable oil, chili pepper, scallions, and zucchini in the wok. Lightly sauté for a few minutes and add the peas (frozen are fine).
Cook for a few minutes, then add the soy sauce and adjust salt if needed.
Put the udon directly into the wok with a splash of boiling water and cook on low heat.
You’ll see they will unravel on their own, if not, help with chopsticks and don’t worry if they break a little.
They will be ready when they are well mixed with the seasoning.
Serve hot.
