Air fryer ricotta balls, super easy and quick, soft with a golden and crispy shell, just like real fried meatballs, but lighter since they’re not fried, thus eliminating all the cholesterol from frying. Ricotta balls are very easy to prepare, surely many of you have already tried them with sauce, they’re also excellent that way, light and the sauce can be used to season pasta. In this case, I wanted to prepare something tasty to serve as an appetizer, yes, I know you can never go wrong with fried food, the taste is unique, but sometimes there’s a friend who doesn’t eat fried food, so I thought of cooking them in an air fryer, and with a few tricks, even a healthy and light dish can become tasty and delicious. For example, I thought of serving the ricotta balls with a pea cream for dipping, but an olive cream or eggplant dip could also be prepared.

- 9 oz mixed ricotta cheese
- 1 egg
- 2 tbsp breadcrumbs
- 2 tbsp Parmesan cheese

Steps to prepare air fryer ricotta balls
In a bowl, put all the ingredients: ricotta, egg, bread, and grated cheese. Instead of breadcrumbs, you can also use stale bread soaked and well-squeezed. Add parsley, salt, and pepper and work to obtain a homogeneous mixture.
With clean hands, form small balls, using a teaspoon of mixture at a time. Place them on a plate one by one.
Now roll the small balls in breadcrumbs until they are evenly covered.
Place the small balls in the air fryer basket, spray them with a little olive oil, and cook for 10-15 minutes at 392°F.
Remove from the fryer and serve, I accompanied them with a pea cream, delicious. For the pea cream, just blend cooked peas with a little butter and onion with some cooking water.
