Steps to Prepare the Apple and Orange Cake
Let’s start by preparing the apples, peel them, slice them, and sprinkle with lemon juice to prevent browning.
Prepare a 20-22 cm (8-9 inch) greased and floured pan, a 24 cm (9.5 inch) pan is also fine for a lower cake that cooks faster.
After measuring all the ingredients for the recipe and preparing the necessary orange juice with a juicer, preheat the oven to 350°F (180°C) static, leaving only the rack in the middle of the oven.
Work with the electric whisks at maximum speed on the eggs in a bowl at room temperature. Add the sugar after a few seconds and work for a few more minutes until you get a light, fluffy, and foamy mixture.
Now work at low speed and add the oil in a thin stream, then also add the orange juice. Finally, add the flour and baking powder and mix gently.
Pour part of the mixture into the pan, layer with apple slices, more mixture, more apples, and finally more mixture. Decorate with the remaining apple slices, sprinkle with a little brown sugar, and bake.
Bake for about 50 minutes in a preheated static oven at 350°F (180°C). Do the toothpick test before removing from the oven; it should come out dry. If the pan is 24 cm (9.5 inch), 40 minutes may be sufficient, but it’s always good to check.
Remove the apple and orange cake from the oven when done, transfer it to a platter, and sprinkle with a bit of powdered sugar before slicing. It stays fresh for days as if just made. Given the apples, consume within 3-4 days at most.
