Apple and Walnut Filled Pastries

Apple and walnut filled pastries are delightful homemade desserts that are quick and easy to make. For the recipe, we use 2 rolls of ready-made puff pastry, but alternatively, you can use rough puff pastry or shortcrust pastry made at home if you have 5 extra minutes to prepare the dough. For the filling, all you need is an apple with walnuts and jam, and to make the filling compact, we can use some dry biscuits, or plain breadcrumbs that are always available, or simply a bit of flour. I used dry biscuits because they were gifted to me and I can’t use them up any other way. Preparing these treats takes only a few minutes, just blend the apple with the walnuts and add a few simple ingredients to fill our pastries. So let’s see how to make the apple and walnut filled pastries.

Steps for preparing apple and walnut filled pastries

  • 1. Immediately prepare the juice of one lemon with a citrus juicer.

  • 2. Peel an apple. Clean it, slice it, then mince it, and place it in a large bowl with lemon juice and mix.

  • 3. Chop the walnuts finely on a cutting board and add them to the apples, together finely chop with a chopper, leaving aside a bit to have small crunchy pieces in the mixture.

  • 4. Put the mixture back into the bowl, add the apricot jam and mix, taste it and if the mixture is bitter, add a little sugar, I used brown sugar but regular granulated sugar is fine too. Finally, add some cinnamon, the reserved apples and walnuts, and lastly adjust the consistency with some dry biscuits quickly crumbled in a bag. Mix the mixture and put it into a pastry bag.

  • 5. Start filling the first roll of puff pastry. Take them out of the fridge a few minutes ahead so they unwind without problems, then fold the first rectangle of puff pastry in half for the entire length. Using the center of the rectangle as a reference, fill only one side of the same half with 6 strips of the mixture, well spaced, and close with the other half, then cut the pastries with a pastry wheel, leaving margins to seal the pastries.

  • 6. As you cut the apple and walnut filled pastries, seal them well by squeezing the edges of the puff pastry and place them on a baking sheet lined with parchment paper, well spaced apart.

  • 7. Brush with milk, sprinkle with brown sugar, and bake in a preheated static oven at 350°F for 20 minutes. Once golden, remove from the oven, let cool before enjoying.

Instead of biscuits, you can also use breadcrumbs or a tablespoon of flour
