  • 1. We start by finely chopping the walnuts in a chopper; I always use my Moulinex chopper. If you want to add a bit of crunch to the dessert, leave some pieces. I also left some for decorating the surface.

  • 2. We prepare the apples by peeling, cleaning, and slicing them thinly in a bowl. Season with lemon juice.

  • 3. Butter and flour a 9-10 inch mold for 8 people. If you want a 6-8 inch cake for 2, 4 people, halve the ingredients.

  • 4. In a large bowl, work the eggs with the sugar using the electric whisk; I always use the Moulinex electric whisks, until you get a fluffy foam.
