I love making treats at home, and these fritters are always the perfect solution when I need a sweet indulgence, plus with ricotta, without additional fats like oil and butter, and the presence of apples, well 2 for so little batter, make them truly perfect sweets. Just quickly prepare a delicious batter with ricotta and many aromas that go well together, such as cinnamon and vanilla, then enrich with raisins and rum, or chocolate chips if you do not like raisins, and finally add the small cut apples with lemon juice.

- 7 oz ricotta (type of your choice)
- 2 medium eggs
- 1/4 cup sugar
- 1/2 cup milk
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 2 tsp baking powder
- 1 organic lemon (zest and juice)
- 2 q.b. Golden apples
- 1 small glass rum
- q.b. raisins
- Sunflower oil for frying

Preparation Steps for Apple Fritters with Ricotta and Raisins
In a large bowl, place the ricotta, add the room temperature medium eggs and 1/4 cup of sugar, mix quickly with the electric mixer.
Add all the flour to the mixture, along with the baking powder, cinnamon, vanilla extract, and milk, and mix at a low speed with the mixer. Then set aside. Add grated zest of one lemon and mix with a spoon to gather all the flour.
Soak a handful of raisins in rum. Instead of raisins, you can also use chocolate, or simply omit it.
Peel the apples, cut them into cubes, and sprinkle with the juice of a lemon.
Add the raisins with rum to the mixture, mix, and then add the apples and mix again.
At this point, we are ready to fry our apple fritters with ricotta. Heat plenty of oil in a pan and fry spoonfuls of the mixture in hot oil at about 347 degrees Fahrenheit. Let the fritters brown on both sides, remove with tongs, drain, and dry on paper towels.
Then arrange on a tray and sprinkle with powdered sugar. Great hot as soon as they are ready, but also soft and delicious later, so you can also prepare them in advance if any are left, but I doubt it, you can enjoy them even the next day, truly fantastic rich in aromas, and flavor with apples and raisins and the softness given by ricotta without needing to add butter or oil.
