Cauliflower omelette, quick and tasty, with little oil in the pan a tasty omelette perfect for using up cauliflower, even leftovers. I love omelettes and when I want a complete and quick meal, I often make one. I love it with potatoes or with zucchini, but it’s not bad at all with cauliflower, and it’s lighter too, with lots of boiled cauliflower mixed with eggs to make a thick omelette that is a pleasure to eat on its own, or even between two nice slices of bread. And since the holidays are coming, why not serve it among the holiday appetizers? Just cut it into cubes, and it’s done. You can make it prettier with the addition of half a cherry tomato and a slice of salami. So let’s see how to prepare the quick cauliflower omelette in a pan.

Steps for Preparing Cauliflower Omelette
Cut the cauliflower into florets, wash it, and cook it in boiling water until tender, drain and let it cool slightly.
In a large bowl, use a fork to beat 4 eggs with salt, cheese, black pepper, and if desired, additional ingredients like sausage, ricotta, cheese cubes, or even simple parsley can be added.
Add the slightly cooled cauliflower to the bowl with the eggs, mash the cauliflower a bit with the fork to make the pieces smaller, then mix well with the fork.
In a 9.5-inch pan, add a drizzle of oil, just enough to cover the base, heat it, and pour all the content inside. Cook with the lid on over medium heat, keeping it on low.
After a few minutes, the omelette will be set, at which point, flip it and complete cooking on the other side. Our omelette is ready to enjoy, great hot in a nice sandwich, or even cold as an appetizer.
If there’s any left over, it can be reheated without problems and stored in the fridge for one day.
