Cauliflower with tomato is a simple and tasty side dish, perfect to accompany meat, fish, or vegetable main courses. Today we will see a slightly different recipe to cook cauliflower, excellent served as a side dish. I combined cauliflower with tomatoes to prepare a flavorful yet very light dish, and maybe we add 2 eggs to transform it into a perfect single dish to accompany with a good slice of multigrain bread homemade for a delicious dipping.

Ingredients
- 1.76 lbs cauliflower
- 3 round smooth tomatoes
- 1 clove garlic
- to taste olive oil
- to taste chili pepper
- to taste salt
- to taste basil
Tools to Prepare Stewed Cauliflower with Tomato

Steps to Prepare Stewed Cauliflower with Tomato
1. Wash the tomatoes, make a cross on the pulp at its apex.
2. In a pot, bring a generous amount of water to a boil. Blanch the tomatoes for about a minute. Then let them cool down.
3. Clean the cauliflower and divide it into florets, cut the larger ones into smaller pieces. Wash well under running water. Boil the cauliflower florets for about 5-10 minutes, or until tender, in the same water used for the tomatoes. Drain and set aside.
4. Peel the tomatoes by pulling the skin from where we made the incision. Cut into pieces, removing the green parts, and blend them with a blender, or chopper.
5. In a pan, pour a drizzle of olive oil, add the garlic clove and chopped chili pepper. Sauté on low heat for a few minutes, then add the tomato purée, salt, add chopped basil and cook with a lid on, for at least 15 minutes.
6. When the sauce is flavorful and reduced, add the cauliflower, and let it cook for a few minutes, to absorb the flavors well. Let it reduce and finally adjust the salt.
7. If desired, you can add some grated cheese, or even parsley or oregano.
