  • 3 carrots
  • 2 Tropea red onions

Steps to Prepare Cheese Vegetable Flatbread

  • Grate carrots and zucchinis with a large-hole grater. Finely chop the onions on a cutting board.

  • Heat a large non-stick pan with a little olive oil, add the chopped onion, then add the carrots after a few minutes, and finally the zucchini, season with salt, and cook for a few minutes. Let cool.

  • In a bowl, add the egg, flour, salt, and pepper, yeast, grated Parmigiano, and a bit of fresh mint, alternatively basil or even oregano. Gradually add the milk, stirring to obtain a smooth batter. Water can be used instead of milk.

  • Add the cooled vegetables to the batter and mix.

  • Line the baking sheet or two 10-inch square trays with parchment paper, grease with a little olive oil, and spread the mixture in the tray. Bake in a preheated static oven at 356°F for about 20 minutes, remove, cover with diced smoked cheese, and return to the oven for 2-3 minutes.

  • Remove from the oven, cut into pieces like pizza, and enjoy, really a treat, better than pizza, to make quickly.
