Cheesy potato and spinach pie with a melty heart in the air fryer, but it can also be cooked in a pan, on the stove, or in the oven. A tasty and quick idea, with microwave-cooked potatoes, fresh spinach sautéed in 5 minutes in a pan, and in 10 minutes, our potato and spinach pie with a melty heart of provolone is a true delight for the palate. In the pie, we use a bit of flour depending on the potatoes we use; mine were very watery, to be clear, potatoes for mashed potatoes, and in fact, not being able to use them for other recipes besides mashed potatoes, I thought of making a pie, and with the flour, I adjusted the consistency, and I must admit that for this preparation, I liked the mix, but definitely no to flour in the Calabrian potato croquettes, I know I’m particular, good or nothing, waiting to have the right potatoes for the croquettes, I leave you the recipe for the pie.

Steps for Preparing Cheesy Potato and Spinach Pie in Air Fryer
Wash the potatoes, place them in a bowl, cover with plastic wrap, cook in the microwave for 7 minutes at 1200 Watts.
Meanwhile, wash the spinach and sauté them in a pan, with just a little salt, and at the end of cooking, after a few minutes, add a little butter. Cover and cook on low heat.
As soon as the potatoes are ready, mash them directly with the potato masher. Add salt, the eggs, and parmesan, after letting them cool for a minute in a wide bowl.
Grease an 8-inch baking pan with olive oil, remove excess oil with a napkin, and sprinkle breadcrumbs on the edges as well.
Prepare the pie in the baking pan. Distribute half of the potatoes in the pan, add the spinach and slices of provolone, and cover with the remaining potatoes.
Spray a bit of oil on the surface and sprinkle with a little breadcrumb.
Cook for 15 minutes in the air fryer at 356°F in oven mode.
Remove from the basket, flip onto a serving plate, and enjoy.
