Ingredients for Chicken Breast with Cardoncelli Mushrooms
- 4 slices chicken breasts
- 14 oz cardoncelli mushrooms
- 1 clove garlic
- to taste chili peppers
- to taste olive oil
- 1 1/2 glass white wine
- to taste parsley
- to taste salt
- to taste flour
- rosemary

Preparation for Chicken Breast with Cardoncelli Mushrooms in a Pan
Cook the cleaned and sliced mushrooms in a pan with olive oil, garlic, chili pepper, and a pinch of salt. You can also add rosemary. Let them brown, then deglaze with white wine. Once the wine has evaporated, set the mushrooms aside. It will take less than 10 minutes in total.
Prepare the meat, 4 nice thick slices of chicken breast, pound them with a meat tenderizer and coat them in flour.
In the same pan, add a little oil, garlic, chili pepper, and rosemary. Sear the meat on both sides, after a couple of minutes deglaze with a little wine, add the mushrooms, and leave on the heat for a few more moments with a lid to allow the flavors to blend.
Remove the slices of chicken breast with cardoncelli mushrooms from the heat, add chopped parsley and serve hot and very tender.
You can prepare the same recipe with other types of meat, such as pork loin slices or even veal slices.
If you don’t like cardoncelli mushrooms, you can replace them with porcini or champignon mushrooms, but nothing prevents you from replacing the mushrooms altogether, perhaps with peas or potatoes.
