Craving a healthy, light, and delicious single dish? Then prepare with me chickpeas with chicory in a skillet. A dish with an intense flavor and simply delicious. This time instead of using the fresh chicory from the market, I wanted to try the bagged one, always fresh, I cooked it directly in a skillet, and I have to admit even though it was very tender it was much more bitter than the soft chicory I usually buy at the market, so if you don’t like too much bitterness, I recommend blanching it first, with a potato, or purchase fresh, tender chicory from the market. I’ve made it many times raw and it comes out great. As you know, the more bitter, the more I like it, so I really enjoyed it, then the chickpeas, being sweeter, balance it out and I also added a potato during cooking, because I realized it was extremely bitter. In the end, for me, it was delicious, but I understand that maybe for someone, too much bitterness might not be enjoyable.

Ingredients for Chicory with Chickpeas in Skillet
- 14 oz chicory
- 9 oz pre-cooked chickpeas
- 1 potato
- 1 clove garlic
- 1 chili pepper
- to taste olive oil
- to taste salt

Steps to Prepare Chickpeas and Chicory
Wash the chicory thoroughly, for the bagged one, a quick wash is fine, as it is theoretically already clean.
Put olive oil, garlic, and whole chili pepper in a skillet. Add the chicory, and a glass of water, and cook covered with a little salt.
Peel a potato, cut it into chunks, wash and add it to the skillet, cook almost to completion.
Meanwhile, prepare the chickpeas. Use canned ones, well washed, or dry ones prepared by us previously, I usually make many and freeze them in portions ready to use, here is the recipe for cooking chickpeas.
Finally add the chickpeas and let everything flavor together for at least 10 minutes. Adjust how dry you want the chickory with chickpeas, we like them well-dried to accompany with a slice of homemade ‘nduja bread.
