Chicory with Potatoes and Beans

Chicory with potatoes and borlotti beans sautéed in a pan, a healthy and light one-pot dish to make in a few minutes with pre-cooked beans, or dry beans cooked in advance, maybe cooked and frozen so they are always ready to use, here how to cook the beans in a crockpot, cannellini or borlotti, the procedure is the same. I love these one-pot dishes, with vegetables, to prepare both for lunch and dinner, usually lighter at dinner without legumes. I often prepare chicory and make it in many different ways, today I boiled it with 2 potatoes, I noticed it was a bit tougher than usual, so to remove some bitterness I used the trick of boiling it with 2 small potatoes and indeed the result was perfect, so much that my husband said weren’t you supposed to cook chicory? He was eating it, and the taste was all there, only it wasn’t as bitter as its typical. Let’s see how to prepare it.
