The chocolate carnival fritters recipe is the usual one, you prepare the fritters according to the recipe and then, once ready, instead of sprinkling with powdered sugar, you add chocolate. I chose dark chocolate for these, but you can also vary according to taste. You can increase or decrease the amount of chocolate according to taste.

Ingredients for chocolate fritters
- 2 1/2 cups all-purpose flour
- 2 medium eggs
- 2 tbsps butter
- 3 tbsps sugar
- 2 tbsps liqueur
- to taste vanilla
- 7 oz dark chocolate

Steps to prepare chocolate carnival fritters
In a bowl, put sugar and butter, work a bit by hand, then add the flour to obtain a crumbly mixture, add eggs, vanilla, and liqueur and work to form a nice firm dough. Let it rest a bit.
Prepare what you need to roll out the dough. Use the pasta machine, alternatively a rolling pin. Prepare a large and well-cleaned surface.
Divide the dough into at least 6 parts and roll out one at a time with the pasta machine, starting with the rollers fully open. Initially, fold the dough multiple times to get a perfect sheet. Use a bit of flour if necessary. Then close the rollers one level at a time up to the second to last and gradually thin the sheet more. Use a bit of flour before passing it to the second to last level, then place it on the surface.
With a pastry wheel, cut the fritters into the desired shape, usually rectangles.
Fry in plenty of hot seed oil, let them brown on both sides and dry on paper towels.
Melt 200g (7 oz) of dark chocolate, using a double boiler or in a bowl in the microwave giving a few seconds at a time. Arrange the fritters on a tray once cold and drizzle the melted chocolate. Keep in mind that with these amounts, you’ll get at least 4 large trays. Sprinkle with colored sprinkles when the chocolate is still soft, and let them cool without overlapping.
When the chocolate has set, if you want, you can add powdered sugar, but they’re delicious without it.
