Christmas sandwich stars with salami and eggs, a simple and quick idea for a festive snack. A great finger food to enjoy in one bite, perfect star-shaped for the Christmas holidays, but also in different shapes for all special occasions throughout the year, perhaps for a simple garden aperitif with friends. To make the stars, I used sliced white bread for sandwiches. With one long slice, you can get 9 little stars, just use a star-shaped cookie cutter to cut them out. For the filling, a quick cream with boiled eggs and mayonnaise. If you have 5 minutes, you can make it at home with my recipe perfect 1-minute mayonnaise. - 5 slices sandwich bread
- 5 boiled eggs
- 5 tablespoons mayonnaise
- 45 slices Napoli-type salami or similar
- 45 pitted green olives

Steps to Prepare Christmas Sandwich Stars
Using a medium-sized star-shaped cutter, cut out about 9 stars from each slice of sandwich bread. Work on a cutting board.
Place all the stars on the baking tray and brush with oil flavored with dried oregano. Bake at maximum temperature with grill function; they will toast quickly, then take them out of the oven.
Prepare the egg cream; the eggs are already cooked in advance, peeled, and cooled, as per the basic recipe how to cook boiled eggs. Cut them in half, place them in a bowl, mash finely with a fork, and then mix with mayonnaise, one tablespoon per egg. If you prefer, blend them with the mayonnaise in a blender. Add a pinch of salt.
Arrange the toasted bread stars on a tray, fill with the egg cream; I conveniently put it in a piping bag.
Prepare the salami into a bow on a toothpick, with an olive, and then insert it on the crostini. Repeat for all our bites. With the leftover bread, I made small stars using an ejector mold for sugar paste to place on top, but it’s not essential.
Keep in the fridge until serving, well covered; our stellar Christmas finger food. Ideally, prepare everything in advance and assemble at the last moment.
