Corfiot baked feta, one of the recipes I love the most, after pita gyros, to enjoy in Corfu when I vacation on that beautiful Greek island in the Ionian Sea. I fell in love with Greek cuisine and often recreate at home the dishes I enjoy on vacation, from moussaka to tzatziki. Imagine I even made baklava, an amazing dessert with lots of nuts and sugar and honey glaze. Often, due to its quickness, I prepare this baked feta, usually served as an appetizer in Greece. I, however, make it as a main dish, usually for dinner, because with one package we satisfy two people perfectly, with a couple of slices of bread to soak up the juices. The baked feta is usually enriched with ripe tomatoes, and lately, I have found it in several typical places enriched with bell peppers and onions. The dressing must be abundant, and there is always good olive oil and dried oregano, with optional olives, for which Greeks are great experts. Indeed, there are some fantastic Greek olive specialties, sometimes even superior to those from Calabria.

  • to taste extra virgin olive oil
  • to taste dried oregano
  • to taste salt

Tools to Make Baked Feta

  • 1 Cutting Board
  • 1 Knife
  • 1 Baking Dish

Baked Feta Preparation Steps

  • Wash the bell pepper and tomato and clean the onion. Cut the tomato into two large slices, or at most three. Cut the bell pepper into strips and the onion into rings.

  • In the baking dish, start by adding a little olive oil. Add the tomato slices to the base. Then, in the empty spaces, place the peppers and onion, which can also be sliced into half-rings. Add a little salt, oil, and abundant oregano.

  • On top of the vegetables, especially on the tomato slices, add the feta in a single block. More oil and abundant oregano, and ready for cooking.

  • You can quickly cook in the microwave, for this amount, the times are about 8-10 minutes at maximum power, I use 1200 watts.

  • You can also cook in an air fryer for 10 minutes at 392°F (200°C) or in the oven for 20 minutes at 392°F (200°C). Whatever cooking method you choose, the important thing is that especially the bell pepper is cooked to the desired point, and the cheese is soft so that it can be eaten like a cream with bread.
