Steps to Prepare Pasta with Zucchini and Smoked Salmon
Put the salted water on the stove to cook the pasta. Meanwhile, finely chop a small onion, put half of it in a pan with a tablespoon of extra virgin olive oil, lightly sauté over low heat and add the chopped smoked salmon. Let it flavor for a while, then set aside in a small bowl. If you like, you can deglaze with a little wine, I avoided it but added a bit of black pepper.
If the water has come to a boil, cook the pasta al dente. Meanwhile, cut the zucchini into cubes, and cook them in a pan with a little oil and the remaining onion, which was first sautéed in the same pan as the salmon. Add a little salt and ground black pepper, cover, and cook over medium heat, it will take about 5 minutes. Add a bit of pasta cooking water and blend the zucchini with immersion blender, choose whether to blend them all or leave some whole. Add the salmon to the zucchini and let it flavor.
With a slotted spoon, take the pasta from the boiling water and toss it in the pan with the sauce, let it blend well, and at that point, we are ready to serve. Just add some chopped parsley, and our delicious creamy pasta with zucchini and smoked salmon is ready to enjoy.
