For the recipe, I used porcini mushrooms that I picked myself, cleaned, cut, and frozen, so I have them ready to use whenever I want them, so we can also use the frozen ones from the supermarket if we don’t have fresh mushrooms as the period they are available is quite short. To enrich my pasta, I used a bit of guanciale, to replace other seasonings, in fact, I didn’t use oil. To make the taste sharper as a good Calabrian, I also added garlic and chili pepper, finally a bit of parsley when the heat is off. So, let’s prepare our deliciously creamy and quick pasta.

  • 5.3 oz cleaned porcini mushrooms
  • 3.5 oz tomato purée
  • 1/4 cup fresh cream
  • 1.4 oz guanciale
  • to taste chili pepper

Steps to prepare porcini and guanciale pasta

  • Let’s immediately put the water on the heat to cook the pasta. As soon as it boils, put the pasta in, salt it, and cook it al dente.

  • In the meantime, prepare the sauce for our creamy porcini mushroom pasta. Sauté the guanciale, as soon as it becomes transparent, add the porcini, still frozen but already cut, let it sauté, and add sliced garlic and minced chili pepper.

  • Once the mushrooms are sautéed, add the tomato purée and a little salt, lengthen with water, and cook for a few minutes, finally also add the fresh cream and let it simmer.

  • Drain the pasta al dente and toss it in the pan with the sauce, if necessary add a little pasta cooking water, to achieve the right creaminess. Off the heat, add chopped parsley, mix, and serve our delicious steaming creamy pasta.
