  • 10 slices loin (half inch maximum)
  • 2.8 oz smoked provola cheese
  • 3 tbsps breadcrumbs
  • Grated Pecorino and Parmesan cheese
  • 1 clove garlic

Steps to Prepare Air Fryer Rolls with Melting Heart

  • In the chopper, blend the flavored bread with garlic, parsley, cheese, and black pepper. Place in a plate.

  • On a cutting board, prepare the meat slices with the meat hammer, making them thin, maximum 1/8 inch thick. Season with salt and olive oil and massage.

  • Dip the meat slices one by one in the flavored bread, making it adhere on both sides. On each slice, place a piece of provola and close to form a bundle, sealing the provola inside, without leaving the edges open, closing the meat slice like an envelope, folding the outer edges inside as well. Press well at the end to compact the roll, and continue until finished.

  • Create 2 rows of rolls and insert 2 skewers, preparing thus 2 skewers with 5 rolls each, or you can prepare a few more and use 4 rolls per skewer.

  • Store the stuffed roll skewers in the fridge, well-sealed, until just before cooking them. If you keep them at room temperature for an hour before cooking, it’s perfect.

  • Place the paper in the air fryer, spray with olive oil, and lay the skewers on top, sprinkle with oil, ideally using a spray dispenser.

  • Cook for 13 minutes at 356°F, then for another 2 at 392°F at the end to brown the bread well. No need to turn them; they will be browned on both sides. The light part you see in the photo is the side of the skewer, where the roll is in contact with the next one, if you want to brown everything, you will have to take the skewer out, turn them over, and leave them for another minute, but it is not necessary, indeed, I didn’t do it.
