Delicious baked potato pie, great to enjoy either hot or cold, with a tasty and rich filling, but the difference is made by the seasoning of the potatoes, which become truly special. It’s not the usual potato gateau, but a pie filled with flavorful potatoes, and how I flavored them, simply with finely chopped Tropea red onion, which releases all its aroma to the potatoes when baking, I also added some chili powder, basically I wanted to put a bit of Calabria in this potato pie of mine, in fact in the filling besides cooked ham there’s also the legendary Silana provola and hard-boiled eggs, which we Calabrians put in everything.

Ingredients for Baked Potato Pie
- 4 potatoes (medium-large) about 2 lbs
- 1 Tropea red onion
- 5 oz cooked ham
- 7 oz Silana provola
- 3 hard-boiled eggs
- to taste thyme
- to taste nutmeg
- to taste black pepper
- to taste salt
- 1/3 teaspoon spicy chili powder
- to taste butter
- to taste breadcrumbs
- 1 oz grated Grana

Steps to Prepare Baked Potato Pie
Peel the potatoes, cut them into cubes, and wash them. Boil in water, drain when soft, place in a bowl, and mash, you can use a potato masher, or even simply a fork.
Also prepare 3 hard-boiled eggs, cook for about 5 minutes from boiling, no more, cool in cold water, and peel.
Prepare a finely chopped Tropea red onion on the cutting board, with a chopper. Add the onion to the potatoes and also the salt, ground pepper, chili powder, nutmeg, crushed thyme, preferably dry, and the grated Grana, and mix well.
Butter a square baking dish with an edge of about 10 inches. Cover with breadcrumbs. Pour about 4 spoonfuls of the mixture into the mold, about half, and spread it over the entire base, you can use a wet spoon, or wet fingers.
Stuff with sliced cooked ham, also add diced provola, and finally the sliced hard-boiled eggs. Close with the remaining potatoes, trying to distribute them evenly over the entire surface.
Sprinkle with breadcrumbs, and add butter dots. Bake in a hot oven at 350°F for about 25 minutes.
You can enjoy the potato pie hot and cheesy, but also great warm or cold, just like a slice of pie.
The potato pie can be stored in the fridge for a couple of days, and it can also be reheated in the oven, pan, or microwave.
If you want to make the potatoes creamier, you can add a bit of milk.
