Exotic shrimp salad, a fresh and light dish with prawns served in a rich salad with mixed fruit, colorful and tasty. Shrimp salad is also perfect to serve during the holidays for a delicious appetizer, in small single portions in a cup, or perhaps served on a scallop shell. I often prepare it at home, I certainly don’t wait for the holidays, and every time I like to use different fruit, depending on the season. Now that the avocados are ripe, yes I have a little tree in the garden, finally this year after a long period of about 10 years, it gave me the first fruits, and I couldn’t miss the opportunity to prepare my favorite salad, exotic shrimp salad with shrimp, avocado, pears, orange, and pomegranate.   • 10.5 oz shrimp tails
  • 1 avocado
  • 1 pear
  • 1 orange
  • 1 1/2 pomegranate
  • olive oil
  • to taste apple cider vinegar
  • salt
  • to taste curry
  • 1 1/2 lemon juice

Preparation of exotic shrimp salad

  • First we prepare the shrimp, which we will use for the recipe cold. We clean them, remove the shell, the head if we have whole ones, and then also the black line on their back, using a toothpick.

  • We cook them in boiling water in a small pot, let them cook for about a minute, we notice by eye that they change, they turn white, with a bright orange color. At that point, we turn off the heat and drain them, let them cool. Alternatively, you can sauté them in a pan with a little oil.

  • We prepare the fruit. Slice the orange, well washed, I have an organic one, with all the peel, into thin slices. We also seed half a pomegranate. Move on to the pear, peel it, and cut it into slices, sprinkle with a little lemon so it doesn’t darken. Do the same for the avocado, cut it in half, stopping the blade at the pit, twist the two halves in the opposite direction, and open the avocado and remove the pit.

    If you live in a warm area, try planting it, you’ll see what a nice surprise in a few years.

  • Remove the peel from the avocado, slice it, and sprinkle with lemon so it doesn’t darken.

  • Put all the fruit in a bowl, season if you haven’t already done so with a little lemon juice, it helps to prevent some types of fruit from darkening when exposed to air, those that turn dark because they oxidize, in this case the pear and avocado.

  • Also add the shrimp to our exotic salad and season with salt and curry, olive oil and apple cider vinegar, mix and serve our exotic shrimp salad.
