Put 100 g of milk in a saucepan with the sugar and bring to a boil to dissolve the sugar. I worked directly in a bowl and put it in the microwave for less than a minute at maximum power. The important thing is to dissolve the sugar.
Combine the hot milk with the rest of the milk, so it cools quickly. If the milk is not pasteurized, boil it all.
You can flavor the milk with a bit of vanilla bean if you like.
Transfer the sweetened milk and fresh cream into the ice cream maker’s bowl. Place the paddle in the bowl to mix the liquid, cover with the appropriate lid, and start the ice cream maker.
