- 2 potato
- 2 tbsps breadcrumbs

- 10 Leccino olives (or Taggiasca)

Steps for Preparing Gratinated Sea Bream Fillets with Potatoes
At the fish market, have the vendor prepare two fillets of a sea bream. If the vendor doesn’t have time, you can easily do it at home. To fillet the sea bream, as always, clean it, remove the fins, then thoroughly remove all scales, and finally fillet it with a sharp knife. Start with a clean cut at the head level, reaching the spine. Then, with one hand, hold the sea bream steady, and with the other hand, knife in hand, fillet it, following the central spine, keeping the knife low, pressing on the spine to take the entire fillet. Turn the sea bream over and repeat the operation, using tweezers to remove any remaining bones from the fish.
Slice two potatoes with a peeler, wash and slice them thinly with mandoline. Soak in cold water and rinse well to remove the starch.
In a chopper, place garlic, parsley, washed olives and capers, add parmesan either in pieces or grated, breadcrumbs, a little olive oil, and finely chop. I use my Moulinex chopper, it’s really great.
Season the drained potatoes with a little salt, garlic, and olive oil, and mix. Place them on a baking tray lined with parchment paper. Make space in the center and place the sea bream fillets. Cover the fillets with the aromatic bread, pressing and compacting it well to make a nice thick crust, then distribute the rest of the bread over the potatoes.
Bake in a preheated oven at 428°F (220°C) for about 5 minutes, then lower the temperature to 392°F (200°C) and continue for another 5 minutes, finally reduce to 356°F (180°C) and keep in the oven for a couple more minutes before taking out and enjoying our delicious gratinated sea bream fillets with crispy gratinated potatoes, just a splash of fresh lemon is needed.
