Grilled Marinated Oyster Mushrooms

How delicious grilled marinated oyster mushrooms are, quick to prepare, and they keep in the fridge for a few days thanks to the marinade with oil and vinegar, making them really very pleasant, with a fresh and enjoyable taste that suits this meaty mushroom with a sweet and delicate taste. Oyster mushrooms can also be grown at home like cardoncelli mushrooms, belonging to the same family. In fact, I did it some time ago, I had bought a couple of mushroom bales, one of cardoncelli, and the other of pleurotus. I love them both, and since I cook them often, I thought, why not try growing them, since they are ready for harvest, you just need to water the bales and wait for the harvest.   • 10.5 oz oyster mushrooms
  • to taste extra virgin olive oil
  • to taste salt
  • to taste parsley
  • 1 clove garlic
  • 1 chili pepper
  • to taste apple cider vinegar

Steps

  • Once you’ve purchased or harvested oyster mushrooms from your home kits, it’s time to prepare them for cooking.

  • On a cutting board, gently detach them from the base, separating them one by one. For grilling, choose the larger and more uniform ones.

  • Do not wash them, but rub them lightly with paper.

  • Heat the grill, in my case the Rowenta double plate electric grill to the maximum temperature.

  • When the plates are hot, place a few mushrooms on the grill at a time, without overlapping, to cover the entire grill. Close it and cook for a few minutes; a couple of minutes should be enough, and then gradually lower the time as the plates remain hot. There’s no need to oil the plates if they are in perfect condition.

  • Remove the oyster mushrooms with silicone tongs, to avoid damage, and continue until all mushrooms are cooked.

  • On the cutting board, prepare a very fine minced mix of garlic, chili pepper, and parsley. Place in a bowl with oil, salt, and apple cider vinegar, and mix.

  • In a tray, prepare a layer of mushrooms, season with the prepared sauce, then another layer of mushrooms and more sauce, and so on. Let them marinate a bit before enjoying these delicious grilled oyster mushrooms. Perfect for any season, they are excellent as an appetizer but also as a side dish, especially for grilled meat.
