Steps for Strawberry Ice Cream
First, we wash the strawberries, preferably with water and baking soda, leaving them to soak in a bowl for 10 minutes. Then rinse, dry, and cut them into pieces.
To prepare the ice cream, we can proceed in 2 ways, either freeze the strawberries or whip the cream. The first method with frozen strawberries.
Method with frozen strawberries. Put the frozen strawberries in a blender, with the cream well chilled from the fridge, and the sugar. This way, we get ice cream ready to enjoy immediately, or we can put it in a tub and freeze it if it’s not consumed immediately or if it’s too soft.
Method with whipped cream. In a clean bowl, whip the well-chilled cream from the fridge with electric beaters. Blend the strawberries with sugar, if needed add a bit of cream to get a nice strawberry puree. Add the blended strawberries to the whipped cream, transfer to a tub, and freeze.
After a few hours, our strawberry ice cream will be ready to enjoy.
If you want to prepare a lighter version, you can replace the cream with yogurt, or even with water, preparing a syrup with the sugar.
As an alternative to sugar, you can use condensed milk or glucose syrup in smaller quantities.
