Lentil soup with croutons, an easy and quick soup to prepare, really rich in taste, healthy, light, and nutritious, a perfect all-in-one dish to prepare both for lunch and dinner, even in advance, you just need to put everything in the pot and then wait about 45 minutes for a perfect cooking of our soup ready to enjoy, with a drizzle of raw oil and chili pepper if you like. Lentils are legumes rich in iron, phosphorus, and proteins, they are also a good source of complex carbohydrates, those with slower digestion that, releasing energy little by little, prolong the feeling of satiety. Moreover, lentils are rich in fibers, and having few fats, they are allies to fight cholesterol and triglycerides, in short, they are friends of the heart and help to keep the arteries clean.
According to tradition, lentils symbolize prosperity and money, for their shape reminiscent of coins. For this reason, in Italy during the New Year’s Eve dinner lentils are eaten with zampone or cotechino, as a symbol of prosperity for the new year. - 9 oz lentils
- 1 red onion
- 1 carrot
- 1 stalk celery
- 2 peeled tomatoes
- as needed olive oil
- as needed salt
- as needed chili pepper
- 2.8 oz croutons
- 4 cups cold water

Steps to Prepare Tasty Lentil Soup with Croutons
1. Put the lentils in a bowl, cover them with plenty of cold water, and wash them, stir the lentils, and discard the dirty water.
2. Place all the washed lentils in a pot, without needing to soak them, and cover them with about 4 cups of cold water.

3. Add all the flavors, celery, carrot, and onion, you can cut them into pieces if you like to find them in the soup, or chop them finely even with a chopper, I left them in large pieces.
4. Add a pinch of salt, a drizzle of olive oil, 2 chopped peeled tomatoes.

5. Cook for about 45 minutes, on low heat, once it starts boiling. Check occasionally to ensure there is enough liquid in the pot. Finish cooking and turn off the heat.
6. After turning off the heat add olive oil and a bit of spicy chili pepper if you like, finally, the inevitable crunchy croutons, if you have stale bread you can make them at home.
