Steps to prepare mascarpone cream without eggs
In a clean bowl, whip the cold cream from the fridge with the electric whisks, do not whip it too firm.
Add mascarpone, start mixing with a spatula or if you prefer directly with the whisks, but be careful to use them just for a moment, otherwise the cream will become too hard. Use the spatula to gently fold it.
At this point, we add sugar; you can use from 1/4 cup and up, depending on how sweet you want it. If the cream is fresh and therefore sweetened, you’ll certainly need a bit more, even double, but always adjust to taste. Incorporate the sugar by mixing with the spatula, otherwise, you risk making the cream too hard.
If you want to flavor this cream, you can add orange or lemon zest, or even vanilla, and you can also use a little juice. If you want to turn it into a Nutella mascarpone cream, pistachio, or jam, avoid using sugar, because otherwise, it would become too sweet, and indeed, maybe choose the unsweetened fresh cream to make the cream less cloying.
The mascarpone cream without eggs can be stored in the fridge for 2-3 days, as well as the desserts made with it. All desserts prepared with mascarpone cream without eggs can be frozen. If you want to use it for tiramisu, I recommend whipping the cream a bit less and distributing it with a piping bag.
