Mother-in-law’s chocolate cake, whose mother-in-law I don’t know, but surely not mine. I was looking for an idea to use up the cream I had expiring in the fridge, I had already made a delicious plumcake before, and I wanted to make something similar, so searching the web I found the mother-in-law’s cake, and here I am trying it as well, what can I say, it’s amazing, tall, soft, and delightful, plus it’s very easy to make. The consistency of the batter is like a very thick cream for filling, which already made me very satisfied even before baking, but the final result was even better. I read several recipes here and there, in the end, I did it my way, and this is the result. I leave you then to the recipe, perfect when you crave chocolate cake, but you can also make it without, and to use up the expiring cream in the fridge, a delicious cake but also easy and quick. I’ll leave you with more easy and delicious cake recipes.

Steps for preparing the mother-in-law’s chocolate cake
Butter and flour the 8-inch pan.
Preheat the oven to 350°F, place the rack in the middle of the oven.
With the electric whisk, beat the eggs for 30 seconds, they can be cold from the fridge, just like the cream.
Add the sugar to the eggs and beat for a couple of minutes.
Once you have a light mixture, add the cream, and beat for another minute.
Then add the sifted cocoa, flour, and baking powder all together, and mix with the whisk at medium speed just until all dry ingredients are incorporated.
Transfer the mixture into the baking pan and immediately put it in the oven after leveling the mixture in the pan with a spatula.
Bake the cake for about 45 minutes, do the toothpick test, if it comes out dry, we can take our delicious mother-in-law’s cake out of the oven.
Let it rest for 10 minutes, then put it on a serving tray and sprinkle with plenty of powdered sugar.
This cake is delicious on its own or even filled, and it can be slightly soaked. Great with a teaspoon of Nutella on the slices or a bit of jam.
