I prepared it in a reduced version since there were only a few of us to eat it, but it can be enriched to make it even more appealing and varied with ingredients. I used mixed yellow and red cherry tomatoes, buffalo mozzarella bites, olives, salami, I wanted to add marinated mushrooms, sweet and sour onions, other types of cheeses and cold cuts, but as I was preparing it, I realized it was already abundant for 2 people, so I stopped, but it can be enriched very easily with mini sausages, small salamis, cheese cubes, and much more. Mine is just an idea, if you want to enrich it also with cooked preparations, such as meatballs, Ascolana olives, mini rice croquettes, other puff pastry snacks and so on.

  • Let’s get a polystyrene ring, cover it with cling film, making sure it adheres well. Then start placing 2 rows of toothpicks well spaced out, one towards the outside and the other towards the inside, but not too tilted.

  • We start arranging the cherry tomatoes, following an order of our choice, then place the mozzarella bites, then the salami, I folded the slices in half and closed them like daisy petals, and placed them with a toothpick where there is space. On each slice of salami, I placed an olive, embellished with sprigs of rosemary, and finally put spinach in the center, but arugula is also fine. I only used spinach for serving, then I cooked them in my butter spinach recipe.

  • We can enrich to taste, depending on how many guests are at the table. My ring was 8 inches in diameter, suitable for 6-10 people if more richly filled and with smaller mozzarella pearls. Enjoy after preparing, serve with some pretzels or garlic croutons.
