To enrich the roasted bell pepper pesto and to soften the taste, I added buffalo mozzarella. The result is a delicious roasted bell pepper pesto with buffalo mozzarella that makes any dish served with it special. I decided to make a tasty and rich pasta dish, excellent to eat hot, but also cold now that summer is coming; just add 2 fresh cherry tomatoes and our delicious pasta salad is ready. Steps to Prepare Pasta with Roasted Bell Pepper Pesto
For the recipe, we need roasted bell peppers which we prepare in advance and clean once cooled. They can be roasted on the grill, in the oven, or even on the stove, but they can also be quickly cooked in a pan; however, the taste will be different from those roasted on the grill. For 2 people, we cook at least 1.1 lbs (3 peppers) which once cleaned will be about 10 oz. I cooked them on the Weber BBQ.
Cook the pasta in abundant boiling salted water.
Meanwhile, prepare the bell pepper pesto by placing the bell pepper fillets in the food processor and blending them into a cream with added buffalo mozzarella, more olive oil, abundant basil, and a bit of sunflower seeds, or if you prefer, pine nuts, walnuts, or almonds.
Drain the pasta al dente, preserving a bit of the cooking water. Dress the pasta in a bowl with the bell pepper pesto cold, and if needed, add a bit of the pasta cooking water to make it creamier.
