Pasta with Zucchini and Creamy ‘Nduja

The pasta with zucchini and ‘nduja is so good, extremely creamy, warm, and comforting. Lately, I don’t make much pasta, but when I do, it has to be delicious. With this idea, I challenged myself to prepare a rich pasta with zucchini, potatoes, and onions, where zucchini is prevalent for a healthy and light dish that is also comforting. So, while looking in the fridge for an idea to enrich it, I saw the slice of ‘nduja I had bought for the holidays but hadn’t yet used. I thought today my comfort food on this cold and rainy day will be pasta with ‘nduja, but not with a simple tomato sauce, instead with lots of vegetables cooked in a pan, and the pasta cooked together makes it become one, tied and combined as an explosion of taste and goodness.   • 6 oz short pasta
  • 2 zucchini
  • 2 small potatoes
  • 1 onion
  • as needed olive oil
  • as needed salt
  • 0.5 oz 'nduja
  • 4 cups broth or water

Steps to Prepare Pasta with Zucchini and ‘Nduja

  • Peel 2 potatoes, wash and dice them finely, start cooking them in a pan with a drizzle of olive oil, meanwhile prepare the zucchini but remember to stir the potatoes in the pan.

  • Dice the zucchini just like the potatoes, wash them and add them to the browned potatoes.

  • Finely chop a small onion and add it to the pan. Add a pinch of salt, stir, cover, and let everything cook together for at least 5 minutes.

  • Now add the water or broth, about 3 cups, I added it cold, but if added hot, it’s even better.

  • When the water comes to a boil, cook the pasta, and cook it al dente. During the cooking of the pasta, add the ‘nduja. With a wooden spatula, mash the potatoes a little to make our pasta beautifully creamy, if you want also mash the zucchini a bit. If needed during cooking, add more broth or water to complete cooking, having the pasta almost completely dry at the end. After a 2-minute rest, it’s ready to enjoy.
