Pasta with zucchini and shrimp with saffron, a complete first course perfect for any occasion, even during the week, with zucchini quickly sautéed in a pan with a little garlic, and fresh or even frozen shrimp if you’re in a hurry. If using fresh ones, you must first clean them, just shell them and remove the vein from the back with a toothpick, in this case you can also skip the saffron, the taste of fresh shrimp is more delicious to enjoy fully. I used frozen ones this time, when I find a good type I always buy those so I don’t go wrong. Preparing a great complete unique dish is quick like this, so we can prepare it even during the week, after returning from work, but so good that it is perfect even for Sunday lunch, in fact my sister-in-law often prepares it for family Sunday lunches.
