Polenta with sunny-side up eggs, a quick yet very tasty recipe, created by chance, from the desire to prepare a quick polenta when nothing else was ready to accompany it, and not wanting to add just grated cheese, I thought of throwing a couple of sunny-side up eggs on top, and the result was so delicious that this recipe became part of our family recipe book, and here I am making it again, once more, I prepared it so quickly that I didn’t think to make a video while I was preparing it, but I at least took 2 photos with my phone and recorded a short video to show you the final result. I love it, it’s so good and quick that it’s always a pleasure, plus it’s a good single dish, if you want you can just add some vegetables, but we can also save them for dinner and at lunchtime this quick polenta is perfect as a single dish. Obviously, the polenta prepared this way is also excellent with a good quick meat sauce in a pan as well as with a parmesan fondue.

Steps to Prepare Polenta with Sunny-Side Up Eggs
Let’s start preparing the polenta by bringing water to a boil in a large pot.
Keep a pan on the stove with a little butter and keep the eggs nearby.
As soon as the water boils, add the instant polenta, add salt, butter, and pepper to taste, and stir to cook. Be sure to stir well to avoid lumps when you pour the flour into the water.
While the polenta is cooking, quickly cook the eggs over medium heat, sunny-side up, so only the whites set.
When the polenta is ready, pour it into 2 serving dishes, put 2 eggs on each plate, add salt, pepper, chopped parsley, and Parmesan to taste before serving.
