Baked zucchini with cheese, mozzarella, and gorgonzola, delicious, quick, and tasty in the oven. They make a great appetizer, side dish, or main course when served with garlic bread croutons. I had some sad-looking zucchinis in the fridge, so I decided to cheer them up by baking them. Since I was already at it and wanted a light dinner, I added some cheese, and in no time, turned those sad zucchinis into a truly tasty dish. Perfect as a main course served with croutons for 2 people, or as an appetizer for 6, or a side dish for 4. The bread bakes together with the zucchini, and in no time, you have a delightful dinner ready, although it’s also a perfect dish for lunch or to season pasta with.

Ingredients for Baked Zucchini with Cheese
- 3 zucchini
- 2 tablespoons extra virgin olive oil
- 1 tablespoon breadcrumbs
- to taste salt
- to taste oregano
- to taste dried chili pepper
- 1.75 oz packaged mozzarella
- 1.05 oz gorgonzola cheese

Steps
Wash the zucchinis and cut them into slices about 1/4 inch thick. Place them in a bowl and add olive oil, salt, oregano, chili pepper, and mix well. Finally, add the breadcrumbs and mix again.
Arrange the slices on a baking tray lined with baking paper using the tongs, creating a circle from the edge and working inward. To make the baking paper stick well, moisten the tray.
Bake in a preheated ventilated oven for about 15 minutes. Remove from oven, add the drained and sliced packaged mozzarella and the diced gorgonzola, bake for another 3 minutes.
Remove from oven and enjoy your cheesy oven-baked zucchini with mozzarella and gorgonzola.
