After the yeast-free naan bread, I discovered that this dough is very versatile, for making pan-fried focaccia, filled or plain, but also pizza, quick without rising, today I wanted to try buffet mini pizzas, and I must say they are fabulous. They can be prepared in a few minutes and come out soft and fluffy, but if you want them even fluffier, you can prepare the dough and let it rest for an hour, you will see they become even fluffier and lighter. So what do you say to try them right away, they are a great idea for a snack, even for the little ones, easy to make at home without rising, but if you want you can also make them risen with my Neapolitan pizza dough, an exaggerated delight, also the fried mini pizzas.

Ingredients for 8 Quick Mini Pizzas Without Rising

  • 3 1/3 cups all-purpose flour
  • 1 1/4 cups plain natural yogurt
  • 1 tsp salt
  • 1/4 tsp baking soda (a pinch)
  • 3.5 oz tomato sauce
  • to taste dried oregano
  • to taste salt
  • to taste olive oil
  • 3.5 oz pizza mozzarella (shredded)
  • to taste basil

Steps for Quick Mini Pizzas Without Rising

  • Let’s prepare the yogurt bread dough without rising. Put all the ingredients, flour, yogurt, salt, and baking soda in a bowl, mix first with a spoon then by hand to get a homogeneous and non-sticky dough, work quickly on a surface to get a smooth ball. Cover with the bowl and let rest for 5 minutes, or longer for even softer mini pizzas.

  • After 5 minutes, or better 1 hour, divide the dough into 8 equal parts. Form balls and round them well between your palms or on a surface. Let them rest for another 5 minutes and cover.

  • After this short rest, we can stretch our mini pizzas by hand or with a rolling pin, always using a bit of flour. Make disks about 4-5 inches in diameter.

  • Transfer the disks onto 2 trays, and cover with tomato sauce flavored with a little salt, oregano, and olive oil.

  • Bake in a hot ventilated oven for about 6 minutes at 482°F, then add the drained and squeezed mozzarella and continue baking for a couple more minutes.

  • Take out of the oven and enjoy our quick mini pizzas without rising garnished with fresh basil leaves.
