Soft and Delicious Lime Apple Cake with Plenty of Apple Slices

Soft and delicious lime apple cake up to the last slice, great to enjoy for breakfast but also perfect as a dessert at the end of a meal, as well as for a snack. It is a soft and moist cake, delightful to taste at any time of the day. Instead of lime, you can also use lemon. I chose lime because I have a tree in the garden, and unlike lemons, it’s available for harvest, so I wanted to try making desserts with it, including this delicious soft apple-filled cake. The cake batter is easily made without butter, eggs, sugar, and flour, with a little seed or olive oil, and lime juice diluted with a bit of water. The cake’s peculiarity is not so much in the batter but in the apples, which are sliced and placed in the cake vertically, allowing them to sink into the cake, ensuring each slice is rich with apples, resulting in a delightful, moist, and soft treat that melts in the mouth. Let’s see how to prepare it.

Ingredients for Lime Apple Cake

  • 3 medium eggs
  • 1 3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1/4 cup lime juice
  • 2 tbsps water
  • 2 tsps baking powder
  • 1/4 cup sunflower oil
  • 2 Golden apples
  • 1 tsp brown sugar (optional)
  • butter and flour for 8-inch pan

Tools for Preparing Lime Apple Cake

  • 2 Bowls
  • 1 Peeler
  • 1 Knife
  • 1 Electric whisk
  • 1 Pan
  • 1 Lemon squeezer

Steps to Prepare Super Soft Lime Apple Cake

  • First, prepare the apples by peeling and slicing them thinly, sprinkle with lime juice and set aside in a bowl.

  • Using a citrus juicer, prepare the lime juice diluted with water.

  • Prepare an 8-inch diameter pan by greasing and flouring it – a 9.5-inch pan works as well for a lower cake, in which case the baking time will be shorter.

  • Preheat the static oven to 350°F.

  • Prepare the cake by mixing the eggs with sugar in a bowl until creamy and fluffy. Gradually add sunflower oil while mixing, followed by lime juice, and finally baking powder and flour, mixing quickly.

  • Pour the entire batter into the pan. Then place all the slices on top of the batter, arranging them vertically rather than flat. Ensure they sink in well and fill all spaces, to create a cake rich in apples.

  • Sprinkle a little brown sugar over the apple slices, but it’s not mandatory. Bake in the middle of the oven for about 45-50 minutes – do the toothpick test before removing from the oven; if it comes out dry, the cake is ready.

  • If necessary, cover with a foil in the last few minutes to avoid the cake browning too much on the top.

  • Remove from the oven when well cooked, let it rest for a few minutes in the pan before turning it over onto a serving dish, a little powdered sugar, and our super soft and slightly moist lime apple cake is ready to enjoy. It stays fresh like newly made up to the last slice.

How to Store Lime Apple Cake?

The cake can be kept for 4-5 days in a cupboard under a glass dome. No need to refrigerate.

Can Apples Be Replaced with Other Fruits?

Yes, you can use pears, peaches, or other fruits like strawberries depending on what’s available in the season.

Is the Cake Moist?

The cake is soft and moist, delightful, great as a dessert for breakfast, a snack, or even as a dessert at the end of a meal, and it could also be paired with a cream accompaniment, like my delicious lemon cream.
