Peach and lemon cake, a soft cake with a delicious taste, great for breakfast but also pleasant at the end of a meal. A quick cake to bake and very easy to prepare, perfect for breakfast. The pleasant taste of peaches blends well with the freshness of lemon, using both the zest and the juice in this cake. A very pleasant soft and moist cake, with many peach slices included in the batter. I initially thought of making a taller cake, but in the end, I decided to make a shorter cake using a wider mold, so it would bake faster, without spending too much time in the kitchen with the oven on, and in the end, I must say it was a good choice, the cake is even more pleasant to eat, not too tall and mushy, but flat with many peach slices. I chose nectarines, but any type of peach works.

Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup sugar
- 3 medium eggs
- 1/4 cup lemon juice
- 3 1/2 tbsp water
- 3 1/2 tbsp sunflower oil
- 1 tsp baking powder
- to taste organic lemon zest
- 3 nectarines

Steps to Prepare Peach and Lemon Cake
Grate the lemon in a large bowl to obtain the zest. Add the sugar and rub it, so that the essential oils are released. Add the eggs and beat with the whisk, for about 5 minutes at maximum speed.
Gradually add the oil, beating with the whisk at medium speed.
Incorporate the sifted flour with baking powder in 2 parts, meanwhile add the water with the lemon juice.
Pour into a 9-inch greased and floured pan. Add peach slices all over the surface, sprinkled with a little lemon juice.
Bake in a preheated static oven at 350°F for about 30-35 minutes, until our cake is dry by doing the toothpick test.
Let it cool before enjoying it sprinkled with a little powdered sugar.
Don’t worry if the peach slices sink into the batter, it will be even more pleasant to taste, if you want this not to happen, you should use a smaller pan, about 7 inches, and overlap the slices, in this case, you might need a little more time for baking.
