Soft clementine cake, the ideal homemade dessert to prepare in just a few minutes with simple ingredients, without butter, a healthy cake to enjoy from breakfast onwards, great also filled and decorated as a birthday cake. The clementine cake is very easy to prepare, just a bowl and a pair of electric beaters. The ingredients are classic, flour, sugar, eggs, baking powder, no butter but using a bit of sunflower oil to make it as soft as a cloud, the clementine juice does the rest, making it a moist and pleasant cake to taste. And if it’s hard to find clementines, you can use other citrus fruits available, fabulous with oranges, but also excellent with lemon, maybe diluted if you don’t like it too strong, I use lemons from my garden, and it comes out delicious. Here in Calabria, clementines are certainly not lacking, and I often prepare this delight; in 5 minutes, it’s in the oven, a nice little cake for our breakfasts, if I can resist not finishing it all immediately, it’s so soft you can’t stop! Great sprinkled with a bit of powdered sugar, but it could also be enriched with melted chocolate, or filled with a good cream, like an orange one, perhaps with clementines, definitely worth trying.

Ingredients for 8-inch clementine cake
- 2 eggs
- 1 1/4 cups all-purpose flour
- 1/2 cup sugar
- 2 3/4 tbsp sunflower oil
- 1/2 cup clementine juice
- 1 1/2 tsp baking powder
- to taste powdered sugar

Steps for preparing the soft clementine cake
In a large bowl, beat with electric beaters the 2 eggs for a few seconds, then add the sugar and mix for a few minutes until obtaining a soft cream.
When the eggs are fluffy and foamy, slowly add the oil while continuing to whisk.
Add the clementine juice and mix at medium speed.
Finally, add the sifted flour, half of it, and incorporate with beaters, then add the rest along with the baking powder and mix until obtaining a uniform batter.
Pour the batter into a greased and floured 8-inch cake pan.
Bake in a static preheated oven at 350°F for about 30 minutes, until a toothpick test confirms the cake is well cooked.
Let cool on a rack, then when it’s cold, sprinkle with powdered sugar. Our soft clementine cake is ready to enjoy.
The cake stays soft under a glass dome for several days as if freshly made.
Try it also with lemon, or spectacularly with orange, or if you don’t have clementines, you can also use regular mandarins.
